I understand that without the Pstat the heating element will continue to boil water ad nauseum until something blows, but could I not get away without one for a while, so long as I closely monitor the pressure and switch the heater off once it reaches say 1.2bar?

One phone call or knock on the door at the wrong time, well, lets hope the emergency pressure valve works. Best to just fix it up, it's an easy job.

Exactly. Look away for 3 seconds and the pressure release valve will pop. If you were just pressure testing a machine that had a bad p-stat, you could tempt fate and let it heat to 1 bar then turn it off and inspect for leaks but I would certainly not try to use a machine in that fashion.
