Hi all,

I would like to know how to perfectly level the stand of my espresso machine, and thus the flow of water from the group head and screen.

What I mean is, I've been trying to use a spirit level and my machine's adjustable feet, but it seems that the level I see doesn't correspond to the angle of the grouphead. Particularly, the water flow from the screen is eccentric from the dispersion screw.

Is the machine level my problem? Or do I need to buy competition-grade screens (and baskets)?

If water flows unevenly from your group, the first thing I would inspect is the dispersion screen, and then go from there. You seem to be working backwards.

Remove your dispersion screen and take a good look. Maybe you've got a clogged screen, or maybe you have a soiled dispersion block.
You're not always right, but when you're right, you're right, right?

You might also check your distribution. Is there any channeling/spritz etc., is the puck level after tamping?

I can't imagine a few degrees matter once the puck is under 9 bar of pressure.

It will take the path of least resistance regardless of angle. Gravity is a weak force. I learned that on youtube.
