The PID and group water temperature has a +20-25 degree offset so if you want 200F brew, set the pid for 223ish then adjust by taste to fine tune.

I keep mine at 107. Little bit cooler than 226, but i'm sure not much is lost in the conversion. This weekend I'll try her at 105 like Grant suggested below and see how that works out with my thermo in the group. I don't have a Scace, and the guy I knew of at CCC in Atlanta that had one apparently moved to Ritual in SF!

Mine at home is set to 105c as well
it is important also not to standarized this,
since the PID gives us the option to "play with the degrees"
and to customize the machine in consideration that every blend of coffee should have his own degree to be brew at,
but sadly enough if you ask that question to roasters
half of them they will not be that specific about it and give tyou the generic 92- 95c

Hey folks, any updates on how your machine is treating you?

I still haven't pulled the trigger on a machine due to a myriad of reasons. I would love to hear how this one is holding up...

Ours is performing like a champ. The missus loves her afternoon latte. She can turn on the steam boiler for a few minutes and the rest of the day the machine idles on the brew boiler. Gotta be :mrgreen:

It's a different taste profile to the HX, but then I haven't gone nuts on calibrating one to the other, plus I have an MC4 in the office and MaxH at home.

Bottom line, makes damn fine espresso. :wink:
