What is the function of the circled item on the attached image? Why is it adjustable and how do you know it is adjusted correctly?

I assume it's an expansion valve. For rotary pumps, they're regulated to 12 bar. The brew pressure is adjusted via the bypass valve on the rotary pump; you can see its brass acorn fitting on the bottom right of the photo.

Interesting, I'm amost certain that wasn't there on my version II, but that just means it might have been located elsewhere.

Per the Bella Barista guide, it's the OPV adjustment.
