Bezzera BZ07 - no crema?

Got my Bezzera BZ07sde (full-auto, no PID), after ordering it from 1st Line. The machine came well packed and in pristine condition. I had no problem getting it going, although I still have not managed to produce satisfactory results as far I as understand.

My new grinder will only arrive tomorrow, so I got out and bought a sealed can of Lavazza Decaf Espresso (pre-ground) to practice. The shots seem to get pulled through OK, with no channeling, but they are rather bitter and have virtually no crema... :( The streams coming from the portafilter are thin and narrow, but they are just dark liquid getting lighter towards the end. Nothing like those slow foamy shots you see in videos everywhere.

The results I am getting are consistent. Is it just my coffee or something else? Needless to say that I am just a noob with a first ever espresso machine on my hands.

What you report is the classic description of stale coffee. While you wait for the grinder to arrive tomorrow, order some fresh coffee (e.g., from one of the roasters on our list of our favorites or Favorite Espresso Blends 2011) and peruse the Recommended Reading in the FAQs and Favorites.

Stale, preground, and decaf. What you have is the trifecta of bad coffee. Don't worry, good coffee and a good grinder (along with tons of practice) will get you good espresso!

You really are wondering why stale, pre-ground decaf coffee is not producing crema. :cry:

Three reasons:
1 - It's stale
2 - It's preground
3 - It's stale
3b - Being decaf doesn't help.

You really need to do some research here on HB, coffeegeek, my website (URL below), and anywhere else you can find to learn about what it takes to make exceptional espresso. Espresso is all about properly roasted, fresh, whole-bean coffee, ground right before it is needed, and used right away. You are feeding your Porsche kerosene.

Indeed, I am getting satisfactory results now, with fresh roast. However, even with hard tamping, my pucks turn out wet and puffy, with occasional channeling. Any recommendations?

Thanks for the update. As for your report of a wet puck and possible channeling, I will be lazy and repost my reply from Dry puck below:

If the puck doesn't make contact with the dispersion screen when the coffee expands, the puck's surface will be wet with a sandy/lunar-esque texture.
