I got 1oz. I weighed it. The grounds were very wet. The brew pressure was slightly more than 8 bar, I upped it. The burrs are grinding as close as they can without clanging I used 7 gms of coffee for one ristretto and single porta filter

Out of one of the groups I got 1.2 oz and the grounds clung to it and did not come out wit the porta filter

Try double baskets, single baskets can be a night mare.. (IMO) although, something does sound more off than that.

What brew time ? ( almost instantaneous ?)
Have you tried the other grind station ?
It's highly unlikely that both burr sets will have the same problem
(It should be possible to choke a shot on any machine )
..and , yes I agree, use the doubles to start with.

Okay I got some improvement by upping the pressure to 9 bar.
So with the double basket should I use 14 gms? Use the double ristretto? Should the brew time be 18 plus seconds?

I would set a base line first to sort out the problems.
Use 18-20 gms, and adjust the grind to give 2 Oz in 30 secs...and a dry puck !
Once you can get that, you can adjust the grind / time to suit your ristretto taste

Yielded. 2.3oz. Started at 3seconds finished @ 20
The puck was slightly wet
The grinder was set as fine as I could get it

So I tried the other grinder side and the other group with similar results. I tried the 18 gms which was a lot to fit in. So before I ran it I undid the filter and a heavy layer of coffee was stuck to the screen. So I backed the amount off to 14. And there was still coffee stuck to the screen before I ran it. I know I tamped it more than thirty too

So if the screen is not supposed to touch the grounds could it be the gasket has collapsed

What do you mean by " finished @ 20 sec" ?
Are you stopping the shot manually,..or running an auto shot volume ?
