25 mg CaCO3/l: water softener yes or no?

Good morning
I need an advice.
I am moving my Expobar Brewtus IV from Parma, Italy to Madrid.
The water coming from the tap of the two towns are very different, while Parma's one has a massive Calcium content (102.10 mg CaCO3/l) and scale build up within minutes, Madrid's one has a very low calcium content (25 mg CaCO3/l) and a really good taste, almost impossible to see scale build-up on appliance and staff there.
I am wondering if it would be better to remove the water softener from the tank so to reduce sodium increase (Water softener increase sodium in water) and -in my opinion- improving water quality by means of reducing filtering.

Water softeners are purely a convenience to alter the characteristics of water with respect to scale, without any regard to how it impacts the taste/mouthfeel aspects of the water.

Absent hard water, I think that switching to a carbon filter and making sure to descale as needed would be a fine option.

We have pretty good water here, mostly from a river source - not groundwater - and I've never found a softener to be necessary.

Then again, I'm not a commercial environment. I don't make lots of steam either.

This is actually an overstatement, since softening water also impacts taste and mouthfeel. And over-softening affects it a lot. Otherwise shops would aim for near-zero hardness and avoid descaling forever.

Yes. The old espresso machine rule of thumb is that water below 50 mg/L hardness does not need to be treated for scale. That rule can be off if the water is very alkaline; but at 25 mg/L you are completely safe.
