Yum... Metropolis Redline espresso

Postby Nik on Sat Nov 07, 2009 4:02 pm

My eyes are spinning from an orgasmic palate... :D

I ran out of Redline and was having to use Black Cat until about 30 minutes ago when I received 2-2 pound bags of Metropolis Redline espresso. I quickly opened it, emptied the Black Cat, set my K30 to the settings I had recorded for Redline, dosed, tamped and made my cappuccino.

Pure bliss! I am never going to run out of Redline again. If you are reading this Greg, aka Pale Rider, I owe you for introducing me to Redline.

Thought I would share this with all.

I'll be trying Redline for the first time next week. Any recommendations as far as rest time, brewing temp, ect?

John....I hope you enjoy it as much as my wife and I do. We couldn't wait for the Redline to get here. We were using both Cafe Ecco's Ambrosia and Black Cat which are highly regarded but neither came close to Redline for us.

I have the PID set at 200F. I ordered the Redline on Monday, it was probably roasted and shipped on Tuesday and received it on Saturday. I am not experienced enough to measure the effect of rest time but it was delicious and fresh. The grind I had set on 6.5 on my Mahlkonig K30 and I used 4.1 seconds of coffee in a LM triple basket. I can't remember the weight of 4.1 seconds time on the K30 but we like it on the stronger side.

Let me know how you like it.

So glad you enjoy it Bob. I have tried so many coffees, as many recommendations here that I could, and I keep coming back to Redline. I've got a 5 pound bag of their Greenline (now down to about 2 pounds), but while I enjoy roasting it, I have not been able to dial in a roast profile that matches the roasted Redline.

I don't dose it quite as high as Black Cat. Around 15.5 to 16 grams in my 14 for SO to 17 for Black Cat range. YMMV. Metropolis runs Mirages, so the blend is E61 friendly.

I have had a sweet spot for Tony's blending magic for years. I was up at Metropolis just weeks after they opened. The shop has grown a lot since then and the blend has changes several times. It has been a while since I ordered some Redline, I should get a bag. If I remember correctly, I use to get the best flavours with a 15-16 gram dose, around 201 on the temperature, 30ish seconds for 1.5-1.75 ounces. Use to be a juicy peach bomb back in the day.

Thanks Jim,

I have never been able to get the formula right on Black Cat. I can tell there is a tremendous amount of flavor in there but I can't hit it. I got close on one shot and when I tried to tweak it to improve it was all out of whack! I just couldn't nail it. Once it ran for over a minute, adjusted the grind by only one stop to make it coarser and it ran for 15 seconds. Next time I adjusted with a half stop and it ran for almost 50 seconds. With Redline I nail it every time.

I have tried all the CC espresso blends and all are good with Aficionado being my favorite. I tried Ambrosia, Paradise Classico and Nuevo, Black Cat and Redline so far and all have been good but the Redline had depth like none of them had. I am going to measure the weight so I can post exactly how much coffee I use but I suspect it's around 18 gms for a double but it's for a large cap.

Good stuff...thanks for the reply.

Bob

Ironically, I just got 5lbs of Redline for the first time on Tuesday. Left a pound out and the rest are in the deep freeze. Great quality and every bit as good as Intelli which I've been using for years. I like them both and will probably stick to Redline for a bit and then back to Intelli to mix it up a bit. I agree its a great roast.

I have been switching back and forth between Redline, PT's Gizmo, and PT's Bella for the last few months. This week I decided to try Black Cat Classic for the first time. I am enjoying the difference, it tastes a little more like cinnamon to me than the other three. I will probably try the organic in a couple of weeks. Similar to Jim's post, I am dosing a little higher; I am using about 1.3 grams more with Black Cat than I do with Redline and the PT's.
