These folks are coffee innovators and I edited my comments to give credit where it's due. I don't want any negative comments to remain especially when any cause of concern has been amply explained by a very responsive vendor. Mainly I appreciate learning more about how to prepare lighter roasted espresso, including the need to age it sufficiently or one may encounter unwanted sourness and flavors and balance that have not fully emerged.

It looks far kinder now. And, just to make it clear, I wasn't selecting you out specifically. I was just addressing my concerns for the tone of the thread and how it can be perceived after the fact.
I wouldn't have known a thing about Neapolitan Espresso and roasting methods if it wasn't for your hard efforts to bring them to light for the rest of us. I wouldn't be surprised if Mr. Espresso noticed a bump in consumption solely due to your good writing. I know you weren't meaning to intentionally criticize Ritual in a spiteful way. It's just that I also go in there often, and I already mentioned the meet up and gathering and the issues with the coffee to them in person. I wouldn't want them to think that I was spearheading a thread that raised questions that are perceived as negative prior to them having a change to address them.

You "finder" consistency that will work, and in an MCAL it's pretty coarse. I guess a "finder grind" gives you wiggle room ...

OT but yes, it's pretty amazing. I've got an MCAL to play with first, then a Hottop B, then a Prestina .... For now the unmodded Pharos still has the same superb grind quality. Drifting back to the thread topic, nice job pointing out how it was off kilter.
