I'm using about the same settings on the Dalla Corte with good results.

I've found that i prefer the Brown Brindles Ethiopian lower in temp. Somewhere around 198 or 199. It's less harsh, and tastier.

I ordered two bags of Ambrosia and have been using it daily for the past week. I finally got the dose/tamp/temp/brew locked in and it's not bad for my taste. I would rate it a 6 on a 10 scale with Redline still suiting my palate better. The flavor of ambrosia seems to fall off pretty quickly on the tongue where Redline lingers. Perhaps its something that I haven't figured out yet but I doubt I will reorder. Counter Culture's Aficionado is much better in my opinion.

but don't you find it comes roaring back after a few seconds. That's what I love about Caffe Fresco, not overpowering, but continues to tell the story long after the shot is finished.
