What is your local shop that carries Redline? I see you are in PA, but wondered if this is close to me? Good coffee is worth a "short" journey.

Take it back and see if they will give you a fresh bag. You will get nothing good from that bag. If they do not, send an email to Tony at metropolis and tell him one of his retail partners is selling real old bags of Redline.

I find it best pulled at a very high brew ratio (restretto), fast (no longer than 23 seconds) and no hotter than 201 or it goes bitter fast. I like it around 199-200. Nut, low acidity, some light fruit and chocolate with a dry wine finish.
