Perhaps the design could be taken one step further, with a second valve on the bottom into which nitrogen could be injected? That should force the air inside the container out through the top valve.

Err, the containers are only for the storage, so they should not be too large as your quite correct in what you say. I split a 1 kilo roast into say 4 containers and then open them as I get to them. This means that container 4 won't have been touched for 8 days and the coffee is still pretty good by the time I do crack the seal. Each container contains around 2 days coffee, sorry should have made that clear (and hence why OK for hottop owners, who may even want to use smaller Jam/Jelly
