Herkimer espresso

Picked up a bag of their espresso blend. Does anyone have any brew parameters they would be willing to share from personal use? There is also I'm much less familiar with this blend than other seattle blends.

I really like Herkimer. Try 199F 18 grams of coffee making 21-24 grams of espresso in 25 seconds no pre-infusion. It is sweet hazelnut with lemon twist and in short milk drinks super tasty. Really like this one.

Don't know how I missed this before. Herkimer is in central NY, there is a picture of our old trolley bridge. What is a shop in Seattle doing named after this town 3000+ miles away?
