Drum Roll... Barefoot Redwood from SohoEspresso

Just received my first shipment from Soho Espresso.

Variety :!: I like, I like. :D

Barefoot Redwood Espresso
roasted Nov 6th, 10 days ago
This is a light northern style roast that stands up beautifully to hot water.
Highly recommended for leverites with pressurized boilers.
I pulled three singles after my Cremina had been on for several hours, third shot the best.
Ran the steam till the light came on before pulling the shot.
10 second preinfusion after a tug on the lever of about 3bar -- my Cremina's p-stat is turned down so I gave a decent pull on the lever to make sure the preinfusion reached the coffee deep in the puck; using the taller single basket
10g coffee ~50ml in the cup

Nutlike in the top third with a bright licorice finish.

To the ear, the pour in the demitasse was like a long drum roll on the snares from a distant playing field, sounds carried on the wind.

Anybody seen the film Drum Line?

Black Cat, a darker & smokier roast, with oil shining on the surface of the bean -- produces dark flecked crema as in cannonfodder's photos of the Achille bench review. However, the last time I ordered Black Cat (from Intelligentsia directly) a few months ago, it was just beyond Full City, if my memory serves. I recall no shiny oil on the surface of the bean.
