What dose, temperature, and volume (for a double) do you recommend for Ethiopia Sidamo (natural), and People's Daily?

They have fairly good brewing recommendations for People's Daily:

Dose: 18-22 grams
Brew Water Temp: 199-201 F / 93-94 C
Brew Time: 25-30 seconds
Brewed Volume/Weight: 1.5-1.75 oz / 30-35 grams

I drink a lot of People's Daily. Right now I'm using 18g and aiming for 28-30g extracted. My Duetto is set at 200F, FWIW.

I don't drink enough of the Sidamo to give any specific recommendations. I usually start with a similar brew ratio for most espresso, though.

I am getting even better results with Peoples Daily these days - starting to get a distinct cherry taste. Around 197t, 18g, 25s, and 30g pulled. I think the better results has more to do with distribution and tamp.

With the Vivaldi I've been doing 16.5g, 26.5g shot, around 30 seconds. Not really sure about temp because I don't know the actual shot temp.

I just went through a bag of People Daily.

Definitely liked it on the longer side (30-32 grams liquid for 18 gram dry dose), as I found the vanilla/caramel/chocolate intensifying too much when pulled short and losing overall sweetness. When pulled longer, I found the shot well balanced and sweet. Temperature wise I was pulling in the 200F range.

I also got a lot of nice winey, berry, floral notes on the aroma which reminded me of other Social coffees.
