Gator meat......I'm not surprised you get good results at 16 grams. That blend is just so darn good any which way.
A friend has some 14 day old Belle, and I got the usual chocolatey-cherry,(less fruit than at 8 days) but also FLOWERS!
There something about how they (and other professional roasters) get those beans roasted that seems to just pour better than my recent home roasts.
Shots from my roasts seem to retain water at the top of the puck, though the grind feels correct.
Moisture content, maybe?

All I was saying is I have a hard time seeing using 20-21 grams to make 1oz of volume as suggested by Klatch, but I won't knock it until I try it (still waiting for my triple basket). Oh yea and by the way, do the Canes have a good team this year? I am excited football is starting again!

Yep, I also have misgivings of that mush coffee, even in a triple basket. I went to 18grams with my former Anita.
BTW, JonR10 (Jon Rosenthal) helped distribute Synesso triple baskets. Best upgrade I did while owning the Anita. Even the spent puck popped out clean.
HIGHLY RECOMMENDED.
