Got 5lbs. of the Sweet Blue with the same roast date (8/17). Pulled a shot on day 7 and went about my business. About 20 minutes later there was such a strong dark chocolate hit, that for a moment I did a mental double take to check whether or not I'd eaten a bit of dark chocolate with my espresso. Yum!
Been pulling Sweet Blue all week. Got some from idrinkcoffee. It had been a while since I had some. Yum.

Mostly pulling in 1:1.5 range. 18g in (ridgeless VST) and 28 to 31g out. 25 to 28 seconds from first drip with a bottomless. Around 200 -201F, is my best guesstimate since I have an HX and Erics thermometer.

Creamy, full body. And chocolate with some subtle sparkle. Aftertaste reminds me of chocolate fudge ice cream

I just finished a thick, creamy caramel shot of the Paradise Nuevo pulled on my Bosco. You simply could not (IMO) duplicate the same mouthfeel & delicious flavor by brewing the blend.
I bit the bullet! :) I should get my La Pavoni in the next week or so.

Try Motorreta from Flight Coffee in New Hampshire. I have been drinking this for about a year. Big chocolate flavors. Needs a week of rest after roasting and is sensitive to grind. 18g of coffee with 28g in the cup after 28 seconds tastes best to me.
Cheers!

I just ordered myself some of Redbird's Sweet Blue and Redbird espresso. Looking forward to trying out the Sweet Blue especially. This is my first time ordering from Redbird.

Over the years I have ordered coffee from all over the US. But for the last several years, I have stayed with Redbird. Very consistent, very good, and always arrives on time when I am running low. Just recently I tried Sweet Blue, and just ordered a few more bags! This is kind of a learning experience for me, as it was the most defined chocolate aftertaste I have had so far. For variety, I alternate between Sweet Blue, Blue Jaguar, and Redbird Espresso.

Just a quick shoutout to those who recommended Acme Motor City - I've been brewing this coffee as a V60 pourover, and all I can say is "Wow!" Syrupy, full body and tons of chocolate, just sweet enough and with some interesting spice that I can't quite place. But this has to be one of the silkiest mouthfeels I've ever had in a drip coffee. Working on their Valve Job next.

Thanks!

How many days post-roast do you receive your beans from Acme? Do they include the roast date on the bag?

Another vote of confidence for the Redbird Sweet Blue. Easy to pull and chocolate all day long. I was doing 19grams in the LM Triple basket, 200F on the PID, and pulling on the ristretto side. Slow start, prob like 1.3-1.5oz pull. Forgive me, I dont weigh the output unless I cant get it where I want on taste alone.

Klatch Belle usually has chocolate as part of the profile, but its not only chocolate. But I suggest it because its one of my favorite blends.

The House Espresso, and the FTO Espresso from Klatch, are both really good, if a bit dark. The House espresso is a really classic PNW, what would be called old school today, espresso blend. Its got that earthy/dark cocoa bite, sometimes some toffee or caramel type, and then a little bit of fruit at the end. The last time I had FTO, I felt it was an excellent milk blend. In milk, the dark choc/milk choc/cocoa nibs flavor comes through wonderfully, but as a shot, its a little too punchy.

Since we're talking chocolate blends, can I get some thoughts on Intelligentsia Analog and Classic Black Cat? I havent bought espresso from Intelly in quite a while, because the blends just got too bright and light bodied for my tastes. (I have continued to enjoy them as one of my favorites for single origens for brewing, where I DO like brightness and such). So, Im curious how the Analog and Classic BC taste these days.

Just finished two bags of Nizza espresso from La Colombe roaster (which I bought on a trip to DC). Very smooth, lots of chocolate, not too dark. I'll order more. Quite forgiving. Pulled on a lever.
