Caffe Fresco's Ambrosia Espresso Blend

This morning at 10:50 my Three-Bagger arrived from Caffe Fresco (thanks, Tony!). At 11:00 the Daterra and the Ethiopian had tape over the valves and were in the freezer. At 11:05 I tasted my first shot of Ambrosia after a 1.5 year wait (about how long I've been obsessed with coffee, and Ambrosia has been unavailable the entire time). The first 12g two-pull shot was sour and a bit "eh." The second shot, 13g for two pulls, was worlds better and gave me a better understanding of the slogan "Fresco... delicious as hell" in Tony's signature. The 14g shot I just tried had even more oomph but was a bit too bitter, so I'll try 13.5g next and play with the grind a bit. Note that this is all only 3 days post-roast-and-post, so I'm sure it'll be even better in the next few days.

Anyone else have comments they'd like to share about it? Can anyone compare it with what it was before the temporary Fresco scaling-down?

Looking forward to how these beans mature!

I just tried mine tonight. I still don't have the ability to describe well, but I had 2 excellent shots. I did about 16 grams at about 200 degrees, and thought it was great, lots of crema at 3 days post roast.

It is probably ALMOST as good as MVP Blend!

I guess I'll have to take your word on it until I receive my MVP order from Paradise and my Ambrosia order from Caffe Fresco which is in the mail as we speak.
I've never had the pleasure of trying any of Tony's beans so I ordered a couple different ones to see what all the buzz is about. I'm looking forward to it!

According to the info on Tony's site the beans are in their prime 6-14 days past roast.

I had to try mine too. and I've still got some dialing in to do. My experience with Tony's products has been that they really do come into their own in that 6 to 14 day window. I'm waiting a couple of days to finish the dialing in.

Just got my bags of Ambrosia, Daterra, and Ethiopia, and am looking forward to trying them. Does anyone have any sense of which ones of these work well as triple ristretto? (i.e., 19-21g dose, 1-1.25 oz pull?)

Think it depends a lot on your machine. I overdose on the commercial lever, closer to 15 or 16 on the Dalla Corte. On the Caravel I fill it up, level and tamp lightly. All come out good although the Caravel is the reference for straight shots.

I echo the exact same sentiments. I ordered a 3 pack from Tony as well as some MVP from Paradise. The 3 packs should be here today, so I'm looking forward to giving it a whirl this weekend. I'm trying the Ambrosia, Red Star and Brazil (aka Daterra). Will try the others soon after I finish up the MVP when it ships next week.

To get the best out of it check the roast date and pull the first shot no earlier than day 6. My Ambrosia is just coming nicely into its own and you have a 10 day window at least for it to be really good.

I opened my 2/2 roasted bag of Ambrosia this morning and tried Caffe Fresco coffee for the first time. I enjoyed ≈1.5oz pulls using 17-20g in a triple basket at ≈25 seconds and 93c. I look forward to more experimentation with this blend over the next several days.

Anyone else have dose/brew combos that worked well for them they would care to share?

I am glad to find another outstanding vendor; thank you Caffe Fresco!
