49mm Espresso Blend for Lever Machines - Page 2

Glad to see the 49mm being talked about on here. It was one of my better ideas (that I stole from Doug at OE :D ). The concept behind the home-lever specific blend was to make an espresso that flourished on the steadily declining temperature and pressure curve in addition to pulling well at the high temperatures characteristic of many of the machines. To meet these challenges, we did all of the development on our La Pavoni Europiccola. As a result, the parameter suggestions listed on the site are Pavoni-specific, but I think they're a pretty good starting point for other machines.

I would be more than happy to answer any questions. It was fun creating this blend and we've already started into development of version two. Sorry for anyone who missed out on the first iteration, but V2 is looking even better. If anyone's interested, I can post notes and pictures of the development process as we go along.

Thanks for sharing the secrets! It's wonderful to read about how ideas find fruition in reality and it's great that you are working on version 2!

49 mm Espresso: singles session

Gotta bang this out quick, the dogs are going crazy for a walk right now. I didn't have a chance to make an afternoon espresso at work today, so I thought I'd pull some 49mm tonight at home. I decided to pull singles to be able to get more shots in me. I started with 7 g doses in my La Peppina at 91° C and took it up to 95° C. By that time, I only had 9.2 g left in this jar (the rest is in the freezer) so I threw the rest in and pulled a shot at 92° C. Tasting notes as follows:

91° 7 g Nice pecan notes, matches closely the double pulled at 93° C.
93° 7 g Plum or dark stone fruit flavors start to come forward.
95° 7 g Cherry cough drop (not in a bad way, but not quite a cherry flavor)
92° 9.2 g The most balanced shot with some dark nutty, caramel flavors and dark stone fruit. I Liked this one best.

The 7 g was a little underdosed, no grounds on the screen and almost bottomed out with the tamper in the single basket. I like this blend and while these notes are for the V1 49mm espresso blend. I'd be happy to hear more about V2.
