Weekend Clover Demo in Nor-Cal (February 16th and 17th)

We in conjunction with Clover Equipment are demonstrating the Clover 1s at 2 cafes in the Sacramento area during February.

Miguel - Please let us know how it turns out. I'm interested in any tips/tricks you might uncover during the demo as Rocket Coffee Roasters will be taking delivery of the first Clover 1s in the Southwest this early March. We had the good fortune of having the Clover highlighted at the AZ Barista Jam and that was enough, coupled with our never ending search for perfection in the cup to become a distributer of the Clover 1s! Exciting stuff to say the least! Wishing you and your demo well and looking forward to your findings.

What sort of tips/ tricks would you like to know? We have had a Clover in our roastery for almost 2 months now so we have a little experience.

Even better! Which grinder would you suggest to pair with the Clover? One for a low volume application ( a few cups per day) and also a grinder for high volume. I know this is coffee dependent but what would a good starting point dose be for a 12oz cup? I'm sure I'll have some other questions at some point but if you have anything you feel is overlooked, please let me know about it.

Larry,

We use a Ditting KR804, a customer of ours uses a KF804. either one should be enough for all but the busiest of shops. For 12 oz I would start at around 35g of coffee and go from there. There are so many variables and profiles you can create it's mind boggling. I have some coffees I like at 35 seconds and others I like at a coarser grind and 3 min.

As mentioned I won't be taking delivery of a Clover until March but will be in Seattle later this month getting the low-down. I am positive I will have more questions after my visit and I look forward to your input!
