I'd say that Vivace is the 'must' and Stumptown a worthy second- it's great to go downstairs at 12th ave and watch the roasters at work. Vivace redefined great coffee in the northwest and even though the current blends may be a little more user friendly they still have top notch baristas and serve a top notch drink.
In Portland Stumptown in the 'must' though imho Billy Wilson serves the best shot at Barista.

Stumptown and Vivace. Both great. I still miss Hines Public Market Coffee. Too bad that condo took over the building.

With John Sanders relocating to Vancouver, we up here are still fortunate to have access to the 'hines' roasting style. His roasting works on Granville island is a quirky little shop that's open often but not always and not on weekends when many people visit the market to shop. I used to buy the beans a few years back though nowadays while I find the roasts are good they don't offer any excitement. But then again that's why I tend to get beans shipped up from the San Fran area these days. I've just finished another bag of Barefoots 'the boss' which was superb pulled on my lever machine and I'm scanning the offerings at Ecco getting ready to order.
