Headed to Rome, Bologna area and Montreux, looking for some recommendations.

I do not have any specific cafes names in mind but I do have a recommendation in Rome; choose a café very near the Vatican, go there in the morning to watch the international parade of people headed to work in the Vatican. You get the chance to see what Catholics wear elsewhere in the world - I found it very interesting and beautiful.
Also, as I learned from a Roman years ago; in Rome it is a cappuccino in the morning and an espresso in the afternoon.

In Bologna, I'd try Caffé Terzi.
In Rome, there are the two famous ones next to the Pantheon: Eustache and Tazza D'Oro. You might also want to try Parana. Several locations, but most likely is in the Medici gardens.

We were in Rome last summer and stayed near the Spanish steps.
One cafe that came to mind is the Antico Caffe Greco, which is the second oldest coffee shop in Italy after Caffee Florian in Venice - https://en.wikipedia.org/wiki/Antico_Caff%C3%A8_Greco

I am not recommending their coffee (since we all have different taste preferences) but for the historical significance and as a point of interest.
