That sounds interesting. I have a kegarator at home and have messed around with both nitro and co2 in cold brew coffee. Nitro is nice, the bigger bubbles co2 was most definitely not. Never thought about trying to carbonate espresso.I really enjoyed the E.T. which was an espresso based drink with tonic water.
Haven't seen any shops in Austin use a refractometer yet, that is cool to hear.

Without naming names, I can confirm that other shops in town use refractometers in testing new coffees, morning dial-in, or staff training. They use tonic at Fleet, but I love shots in topo chico myself. Use ice for best results & be sure to use a generous sized glass as the crema interacting with the bubbles leads to a big root beer float type of fizzy head on top.

Also was able to go to Fleet a few weeks ago. Really impressed and had a great convo with very friendly/personable owner. Will definitely be heading back there again!

Just a quick note. When I was at The Domain for a few days last week, I got my morning shots at Apanas on Rock Rose, and found it quite good (some barista variance, though). They don't roast their own coffee (yet, but they plan to), and were pulling a Nicaraguan that was very tasty, with some nice complexity (pourover available too). I would describe their style as très troisième vague, so you have to appreciate some brightness and citrus to enjoy it. They have another location on Congress, but didn't get down that way.

While I only managed to sneak over to CoffeeChamps ATX for the final three hours of Day 1, I had a great time and got to meet some cool folks. Not sure what the national events are like, but the scale of the regional event was kind of perfect from my perspective. Very affordable ($15 for 2-day pass.) Plenty to see. Easy to get around. Quality convos. Highlights below.

Just happened to stumble across this in Austin passing by one of the new locations under construction. Is anyone familiar with Greater Goods Roasters or ordered from them previously? Currently located in Dripping Springs but have two locations opening up in Austin in 2017. Sounds like an interesting spot to check out plus roasted coffee prices seem really reasonable especially in the larger bags 2lb/5lb. Couple links below with some information, excited to see what happens with it once opened here.
