Also, to be fair to Baratza I will be getting in touch with them to see if there's a problem with my specific machine. Of course it will be hard to pinpoint what the problem is or whether I'm simply expecting too much from the grinder. I do hate the time and shipping waste of sending things back and forth.

Before you give up on the Virtuoso give Baratza a call and talk with their customer service people. They are quite responsive and helpful. Perhaps there is a reason your particular unit ws returned and subsequently restored and/or your burr set is off. I would also recalibrate the unit to a more coarse bias so that your FP setting is in the mid 20's.
