So the pino kettle doesn't hold at temp? It just cycles from boiling to your set temp, then back up again?

Scott, just FYI I saw a reference today to a PID-controlled kettle by Bonavita that's supposedly set for early 2012 release. Here's the relevant GCBC thread.
