When I made that statement, It was based on using 720g of water. Hardly a small batch. The problem is that I have no experience with other automatic brewers and you might not have exoerience with the Ottomatic, so we really have no frame of reference.

On another note, for reasons I cannot explain, I have had better results relative to the "hotness of coffee" with smaller batches. The smaller batch I had at Oren's, was slightly hotter, but they preheated their Chemex used with their Ottomatic with HOT water from a Bonavita variable temperature kettle. I had not preheated my Chemex.

As I said, there is much we need to learn.

Hey there!

Regarding the post brewing temperature potential concern, this is not a major concern for me since I can't drink coffee right after it is brewed anyway on any of my brewers....my Krups, Bunn, or Kalita. I usually need to let it sit awhile anyway. I know some people really need theirs piping hot to drink. A more critical temp for me is for the brewer to hit the proper brewing temp range. Once I get an Ottomatic, I will measure the temp of the shower head output before it hits the grounds.

How is the Chemex glass for insulation?

Glass is not known for its heat retention quality--Chemex or otherwise.

Heat loss has always been an issue with any Chemex. The taller the Chemex, the greater the distance the coffee may have to fall, and the greater the heat loss, when brewing a small batch. Brewing a full pot, like with most brewing methods that are not specifically small batch methods, minimizes this. The hand blown models are thicker glass and are therefore slightly better insulators. It also helps to preheat a Chemex with hot water.

The Ottomatic has a built in hot plate, that keeps the temperature at 170F, which helps.

Thanks Jay. I knew that glass is not a good insulator but did not know how bad the Chemex was.

So there are differing Chemex models? Manufactured and hand blown? Which one comes with the Ottomatic?

I appreciate all this info.

I will repeat my suggestion. Go to the Chemex web site. www.chemexcoffeemsker.com. The 6 cup classic comes as the default brewer. I am using my Ottomatic with the 6 cup glass handle Chemex. Go to their web site.

I am finding that changes in grind settings, other things being equal, seem to be more noticeable with the Ottomatic then when I brewed (Chemex) manually. I am not saying that I have yet found the optimal grind. Far from it. All that I am saying, is that changes appear more evident, compared to manual brewing. Perhaps it is because the temperature and water delivery are now constant and my pouring technique is no longer part of the equation, which, given my coordination, is all to the good. I do wish there were more early adopters to compare notes with.

Jay,

I will be receiving my Ottomatic within 2 weeks time so I will also be able to do some experimentation as well. That, to me, is the fun part!

I will stick with the standard Chemex 6 cup brewer, and get the pre-folded square filters. My biggest issue is getting fresh roasted coffee since most places near me don't roast, but I can get something via Internet.
