I say 500gram capacity, because that way you don't have to find something really lightwieght to measure the beans with. Plus it gives you that extra room.

My espresso scale is 500grams, my brewing scale/roasting scale is 2kg.

In the FWIW mode, I don't weigh the beans before grinding, and when weighing my doses, I weight just the basket, tare, and weigh the full basket . . . for this purpose, the pocket-sized Escali 50-gram scale works fine.

I had the exact Escali Liberta mini scale OE sells, and I found it went through batteries like crazy, and didn't read very reliably. I've had a lot more luck with the dealextreme scale I linked (also available cheaper from Chinese eBay sellers).

I've also tried various cheap 0.01g precision scales. They are not often accurate or repeatable enough to make their precision meaningful, and it's not really all that useful to be able to measure dosing so precisely, either. I have the 1kg version of the scale Jeff mentioned, and I'm fairly certain they're exactly the same inside, with a limit set so you have to pay a couple dollars more for the larger range. I find it useful to have a scale that can weigh more than 50g to 0.1g accuracy without having to get out the Ohaus 0.01g scientific scale.

I know how much my portafilter baskets weigh, so I don't usually even bother to tare. 43.5g is a 16g dose :)

I have eight ridgeless double baskets, and no two weigh the same. They weight anywhere from 26.25 grams to 28.40. I have two ridgeless single baskets: 22.70 and 24.10 grams, respectively.

Thus, I tare. (EDIT: though not with every shot/dose. Since I dose by time, I use the scale every 1-2 weeks as a "double-check" on myself, or when I'm dialing in a new coffee.)

I really like a silicone pot holder or even 8" x 8" x 2" silicone square cake pan for tamping and prep, you know that they're food safe and pretty inexpensive, and you can find them easily in the kitchen. The cake pan is overkill, I'm usually not that messy, but I was originally using it for a knockbox (now I use a metal bowl).

I figured someone would point this out. My four ridgeless double baskets are of the same make, and were ordered at the same time. Three of them are within a 0.3g spread, and the other is a gram heavier than the lightest one. I rarely use more than one at once, but I scratched the actual weight into the side of each of them, so I don't have to tare the scale. The one I use the most just happens to be 27.5g.

What I'm getting at is that it's just one more thing to fuss about in an already overly fussy routine. 0.01g precision is completely meaningless for espresso dosing.

Something I just thought of--providing softened water. Our tap water has such a high mineral content that we could probably survive without eating vegetables. What's the best (read: most cost-effective) option here: getting a small water softener system specifically for the machine (though I doubt I'll be plumbing it in), getting filtered/softened/distilled water from the store, or changing our Brita filter every month?
