From my own experience...
For mold to grow there as to be mold to begin with. Thus, if your knockbox, drawer, house is not contaminated (yet) there will not be any mold growth. Even if you leave the spent ground seating for days.
Molds are very common and it is unlikely that anyone would go very long without seeing it appearing at some point. John, I guess, you either have been lucky or you are disciplined enough to maintain the sufficient level of cleanliness to keep the molds at bay.
Once molds have began colonising your knockbox, cleaning with dishwasher soap will not be sufficient to get rid of them. I found that a bleach bath did get rid of the molds in my knockbox. It would not be so easy for a whole drawer or kitchen cabinet.
I have no idea if these "coffee molds" are of any health concern? I have them growing in my knockbox, on-and-off, for a while and have not seen a difference in my overall health but that does mean anything.
One last detail; if you do not see molds it does not mean that there is none. It may just mean that they have not had the time to spread just yet.
