Tamper and knockbox - Page 4

I use the Knockout Box from CC as I like to keep the knockbox in a drawer out of site unless needed. Why waste precious counter space with a knock box if you don't have too. Any standard size kitchen drawer can easily be adapted to hold one of these.

The stainless k/b tray gets emptied into a small compost bucket kept under the sink which I take out and empty on the compost pile every 3-4 days.

I stll like my old knockbox. The brushed stainless matches nicely with the Cimbali brushed stainless body.

I fully agree with you, but I do not have an available drawer near by....Yet.

If you've got a cupboard under the espresso machine you can pick up a drawer assy. with sliders at most home improvement stores. This can be mounted inside the cupboard door either on a shelf or hanging from the underside of the counter.

Hi Paul,

if you're still following this thread I'd be very grateful to know what's the smallest size of grouphead your Cafelat cleaning brush has been tested with successfully.

My regular machines (Elektra MCal, Olympia Cremina) both use 49mm baskets and I'd like to keep them cleaner both than their owner and than is easy to achieve with the Pallo brush I use at the moment.

The only thing you really need to worry about with an in drawer knockbox, is moisture. Those hot and steamy pucks bleed off a lot of moisture. Enclose them in a small space and you get condensation inside the cabinet which could lead to mildew and mould in your coffee bar.

I guess if you leave the old pucks in there long enough mold will grow on the pucks but in two years of use I haven't seen any issues with the wood. Most drawers have plenty of air space over them so its not like they are fully enclosed plus it only takes me two days to fill the tray so it gets dumped regularly. After I dump the puck I rinse off the p/f & flush the screen before closing the drawer so any steam is long gone. Something to watch out for I guess but as I said it hasn't been an issue.

I only have to empty the big bumper box about once a week but I usually do it more often than that. I have had molded pucks at bottom before, which is why I empty it more often.

I am planning an espresso bar and have been thinking about whether to cut a hole in the countertop for a dedicated knockbox passthru to a trashcan, stay with a knockbox on the countertop, or use a drawer. If I don't empty the knockbox every other day, mold starts to grow. Bleech.

From my own experience...

For mold to grow there as to be mold to begin with. Thus, if your knockbox, drawer, house is not contaminated (yet) there will not be any mold growth. Even if you leave the spent ground seating for days.

Molds are very common and it is unlikely that anyone would go very long without seeing it appearing at some point. John, I guess, you either have been lucky or you are disciplined enough to maintain the sufficient level of cleanliness to keep the molds at bay.

Once molds have began colonising your knockbox, cleaning with dishwasher soap will not be sufficient to get rid of them. I found that a bleach bath did get rid of the molds in my knockbox. It would not be so easy for a whole drawer or kitchen cabinet.

I have no idea if these "coffee molds" are of any health concern? I have them growing in my knockbox, on-and-off, for a while and have not seen a difference in my overall health but that does mean anything.

One last detail; if you do not see molds it does not mean that there is none. It may just mean that they have not had the time to spread just yet.

Nothing authoritative here, just adding to the common reflection my 2 Canadian cents worth.
