Always glad to complicate people's lives with even more issues they hadn't thought about. :D Consider that, as your skills improve, lattes may become a much smaller part of your menu. For many of us, as we were exposed to better and better espresso, we found less need to hide most of its flavor in a mug of milk.

I must be a slow study then; after 30+ years of making espresso, I still prefer my morning drink to be a milky drink.

When people are having problems with their espresso, it tends to be "milky" morning, noon and night.
